Ah, Spring! After the long, dark winter days I’m hungry for fresh greens, longer days, and Spring eggs. Some of the first greens to emerge on the farm are dandelion and nettle. My body longs for the bitterness of Spring dandelion greens and the earthy flavor of the first cup of nettle tea, both give my body the jump start to transition into the next season.
I feel the same about eggs....for months the hens have been less productive, preferring to stay inside their cozy shelter while the rain and cold dominate the season. We still have a steady supply but, they lack the zest that only Spring offers. The first rays of warmth you’ll find the hens venturing out on the pasture; scratching and pecking for plump worms and new, sprouted green weeds. Production picks up as the days get warmer and the grass begins to grow... soon we are enjoying the beautiful golden yolked treasures in abundance. Vibrant orange yolks filled with Spring greens, vitamin D and sun rich nutrition with a rich taste like no other season. We will eat them several times a week, over a bowl of sauteed greens, made into yummy, veggie filled omelettes with dandelion pesto or just boiled and enjoyed out of hand. My body is fortified with the goodness of Spring.
You won’t find these eggs in any store and if you shop your local farmer’s market, be sure to talk to your farmer about their practices and their birds‘ access to fresh green pasture and clean feed. I feel blessed that my birds enjoy the freedom to roam in green pastures, eating the things they were born to eat, transforming the energy of Spring into nutrition my body knows how to use.
We have an abundance to share right now, either from our self serve farm refrigerator or, find us at the McMinnville Farmer’s Market at the Grange the first and third Saturdays of every month...while the abundance lasts :)
